Ingredients

– 1 pound ground beef

– 1 chopped onion

– 2 minced garlic cloves

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 cup sliced carrots

– 1 cup diced potatoes

– 1 cup corn kernels

– 1 cup chopped green beans

– 1 can (10.5 oz) cream of mushroom soup

– 1 teaspoon dried thyme

– 1 teaspoon dried parsley

– 1 cup shredded cheddar cheese

Instructions

1-Brown 1 pound of ground beef in a skillet and drain the fat, then add 1 chopped onion and 2 minced garlic cloves, cooking until soft.

2-Transfer the beef mixture to a slow cooker and add all the vegetables: 1 cup sliced carrots, 1 cup diced potatoes, 1 cup corn kernels, and 1 cup chopped green beans.

3-Stir in 1 can (10.5 oz) of cream of mushroom soup, 1 teaspoon dried thyme, 1 teaspoon dried parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper, mixing gently for an even blend.

4-Cover and cook on low for 6-8 hours until the vegetables are tender, keeping in mind the total time is about 8 hours and 20 minutes including prep.

5-Add 1 cup shredded cheddar cheese 30 minutes before serving to let it melt perfectly.

6-Let the casserole rest for 10 minutes after cooking to improve texture and flavor before dishing it out.
