Ingredients

– 2 cups all-purpose flour plus 1 tablespoon for coating blueberries

– 3/4 teaspoon baking soda

– 1/2 teaspoon kosher salt

– 1 cup granulated sugar

– 1/4 cup softened butter

– 1 cup mashed ripe bananas

– 2 eggs

– 1/3 cup vanilla or plain yogurt

– 1 teaspoon vanilla extract

– 1 1/2 cups fresh blueberries (additional for topping; frozen may be used but can discolor batter)

– Cooking spray for the pan

Instructions

1-Preheat the oven to 350ยฐF (175ยฐC).

2-In a medium bowl, combine 2 cups flour, baking soda, and salt.

3-In a large bowl, beat sugar and softened butter at medium speed until fluffy (about 1 minute).

4-Add mashed bananas, eggs, yogurt, and vanilla extract; beat until blended.

5-Gradually add the flour mixture, mixing at low speed just until moistened.

6-Toss blueberries with 1 tablespoon flour to prevent sinking, then gently fold into the batter.

7-Pour batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.

8-Press extra blueberries on top for decoration.

9-Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.

10-Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
