Ingredients

– 3 very ripe bananas (medium/large)

– Β½ cup unsalted butter (8 tablespoons) at room temperature

– ΒΎ cup sugar (or honey as a substitute)

– 2 large eggs, lightly beaten

– 1 Β½ cups all-purpose flour (or organic whole wheat flour for a healthy alternative)

– 1 teaspoon baking soda

– Β½ teaspoon salt

– Β½ teaspoon vanilla extract

– 1 cup walnuts (lightly roasted and chopped, optional)

– Β½ cup raisins (optional)

Instructions

1-Preheat the oven to 350Β°F. Grease and flour a loaf pan measuring approximately 9.25 x 5.25 x 2.75 inches to prevent sticking.

2-Lightly roast the walnuts in a skillet, stirring continuously; chop coarsely and allow to cool if you’re using them.

3-In a mixing bowl, cream together the softened butter and sugar (or honey) until it’s smooth and fluffy.

4-Mash the bananas until they reach a chunky applesauce consistency, then add to the batter along with the eggs. Mix until everything blends well.

5-In a separate bowl, whisk together flour, baking soda, and salt to combine the dry ingredients evenly.

6-Add the dry ingredients to the banana mixture and stir in vanilla extract, walnuts, and raisins if desired.

7-Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

8-Allow the bread to rest for 10 minutes before transferring to a rack to cool completely, helping it set properly.
