1 cup whole-egg mayonnaise

1/4 cup sweet chilli sauce

1 tablespoon sriracha or hot chilli sauce (optional)

1 tablespoon honey

1 tablespoon lime juice

600 grams boneless chicken thighs, skin on or off

1 teaspoon sweet paprika

1 teaspoon onion powder

1/4 teaspoon freshly cracked black pepper

1 tablespoon tamari or regular soy sauce

1 tablespoon brown sugar

1 tablespoon olive oil

1/4 cup bang bang sauce (from above)

1 spring onion (scallion), sliced

Steamed rice

1 cup shredded red cabbage

2 carrots, grated or julienned

1 cucumber, sliced

1 spring onion, finely sliced

Instructions

1-Preheat oven to 220ยฐC (425ยฐF) and line a baking tray with parchment paper.

2-Combine the bang bang sauce ingredients in a bowl, then set aside. Reserve one-quarter of the sauce for brushing on the chicken before baking.

3-Place the chicken between sheets of baking paper and pound to even thickness, then cut the pieces in half vertically.

4-Marinate the chicken with 1 teaspoon sweet paprika, 1 teaspoon onion powder, 1/4 teaspoon freshly cracked black pepper, 1 tablespoon tamari or regular soy sauce, 1 tablespoon brown sugar, and 1 tablespoon olive oil, tossing to coat evenly.

5-Arrange the chicken on the baking tray without overlapping to allow caramelization.

6-Brush the reserved one-quarter of bang bang sauce on top of the chicken pieces.

7-Bake for 25-30 minutes or until golden and cooked through.

8-Serve with steamed rice, 1 cup shredded red cabbage, 2 carrots (grated or julienned), 1 cucumber (sliced), drizzle the remaining bang bang sauce, and sprinkle with 1 spring onion (finely sliced).
