Ingredients
28 oz (800 g) pork sausages (about 12)
3 cups (750 ml) beef stock
1/2 cup (125 ml) dry red wine (such as Cabernet Sauvignon or Merlot)
14 oz (400 g) onions, peeled and sliced
4 tablespoons plain flour
3 tablespoons butter
2 tablespoons Worcestershire sauce
1/4 to 1/2 teaspoon dried thyme
Salt and black pepper to taste
Olive oil as needed
4.4 lb (2 kg) white potatoes, peeled and diced (Maris Piper variety recommended)
1.5 cups (150 g) grated cheddar cheese
1/2 cup (125 ml) milk or cream
4 tablespoons butter
1 heaped tablespoon Dijon mustard (adjust to taste)
Salt and black pepper to taste

Instructions
1-First, get everything ready: peel and chop the potatoes and gather the sausages, beef stock, onions, and other items.
2-Next, boil the potatoes in salted water until they’re soft, then drain and mash them with butter, milk, cheese, and mustard for that creamy layer.
3-Cook the sausages in a pan with a bit of olive oil until they’re browned and done, adding depth to the dish.
4-Once that’s set, preheat your oven to 200°C (390°F) and layer the sliced sausages in a baking dish, pouring the gravy made from stock, wine, onions, flour, butter, Worcestershire sauce, thyme, salt, and pepper over them.
5-Spread the mashed potatoes evenly on top for a nice seal.
6-Cover with puff pastry, trim the edges, and cut vents for steam.
7-Brush the pastry with milk for a golden glow.
8-Bake for 25-30 minutes until it’s puffed and ready.
9-Let it cool a bit before serving to keep everything in place.
