Instructions
1-Heat 1 teaspoon olive oil in a skillet over medium heat.
2-Add the sliced red onion, season with kosher salt and a pinch of red pepper flakes, then stir in 2 tablespoons honey once the onions soften. Let them caramelize for about 5 minutes.
3-In a bowl, mix 1/2 cup ricotta cheese with 1/2 cup softened goat cheese, and spread it evenly over the naan.
4-Top with the caramelized onions and sprinkle 1 cup blueberries on top.
5-Bake for about 10 minutes until the blueberries soften and the naan toasts.
6-Remove from the oven, add chopped parsley, and serve right away.
