Instructions

1-First: remove the casing from 2 pounds of boudin sausage links and mix the meat in a bowl with the other ingredients. In a large mixing bowl, combine the boudin sausage, 2 large eggs, 1/2 cup buttermilk, 1 tablespoon Creole seasoning, 2 cups plain breadcrumbs, 1 teaspoon onion powder, and 1 teaspoon garlic powder. Mix well to integrate all flavors, then shape the mixture into 1.5-inch balls and chill them for at least one hour to help maintain their shape.
