Ingredients

– 4 lbs beef chuck roast, cut into large 3-4 inch pieces

– 2 tablespoons neutral oil

– 1 chopped yellow onion

– 2 large leeks (white and light green parts only, rinsed and sliced)

– 4 peeled and thinly sliced garlic cloves

– 3 peeled and chopped large carrots

– 2 cups red wine, such as Merlot or Cabernet Sauvignon

– 2 cups beef stock, preferably homemade

– 4-5 sprigs fresh thyme

– 2 fresh bay leaves

– Kosher salt, to taste

– Freshly ground black pepper, to taste

– Fresh minced chives, for garnish

Instructions

1-Preheat the oven to 350Β°F and prepare your beef by patting it dry and seasoning with salt and pepper.

2-In a large pot, heat the oil over medium-high heat and brown the beef on all sides for 3-4 minutes each.

3-Remove the beef, reduce heat, and sautΓ© onions, leeks, and garlic for 5 minutes.

4-Add 2 cups of red wine and 2 cups of beef stock, bringing it to a simmer, and season lightly.

5-Return the beef to the pot, add 3 chopped carrots, 4-5 thyme sprigs, and 2 bay leaves, ensuring the beef is just above the liquid.

6-Cover and braise in the oven for 2 Β½ hours, then uncover and cook for another 30 to 45 minutes until fork-tender.

7-Skim off fat, cover, and let rest for at least 45 minutes before gently rewarming and garnishing with minced chives.
