1 cup shredded cheddar cheese (freshly shredded preferred)

1/4 cup maple syrup

Instructions

1-First, brown the breakfast sausage in a skillet over medium heat until it’s fully cooked, then drain the grease well using a paper towel to keep things from getting too oily.

2-Next, preheat the oven to 400 degrees Fahrenheit to get it ready for baking.

3-In a large mixing bowl, combine the 2 cups of pancake mix and 1 1/2 cups of water (or milk) following the package directions to make the batter.

4-Add the cooked sausage, 1 cup shredded cheddar cheese, and 1/4 cup maple syrup to the batter, and stir until everything is fully mixed.

5-Spoon the batter into mini muffin pans, filling each one about halfway; this should give you around 48 mini muffins.

6-Bake at 400 degrees for 12 to 15 minutes until the tops are golden brown.
