4 cups broccoli florets

1/2 cup shredded cheddar cheese (sharp white cheddar preferred, though mozzarella can be used as an alternative)

1/4 cup almond meal (all-purpose or gluten-free flour can be used as alternatives)

2 large eggs (whipped)

1 garlic clove (minced)

1/2 teaspoon paprika

1/2 teaspoon salt

A pinch of black pepper

Olive oil or a neutral oil (such as grapeseed oil) for cooking (use about 1 tablespoon per batch)

Instructions

1-First: cook the broccoli by boiling it in water for 2 minutes or microwaving it with 1 tablespoon of water for 2 minutes until tender. Let it cool and chop it finely to a coarse grain consistency.

2-In a large bowl, mix the chopped broccoli with 1/2 cup shredded cheddar cheese, 1/4 cup almond meal, 2 whipped large eggs, 1 minced garlic clove, 1/2 teaspoon paprika, 1/2 teaspoon salt, and a pinch of black pepper; stir well.

3-Heat 1 tablespoon of oil in a pan over medium-high heat. Spoon about 1/4 cup of the batter into the pan and flatten it into patties. Cook the patties for 2-3 minutes per side until golden brown, preparing in batches to avoid overcrowding and adding more oil as needed. Serve warm for the best taste and texture.
