Instructions
1-First, preheat the oven to 350 degrees Fahrenheit and prepare your baking dish, such as a 9ร9 pan or a 10.25-inch cast-iron skillet, by lightly greasing it.
2-In a large bowl, combine 7 heaping cups of frozen sweet cherries, 1/4 cup of a natural sweetener, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract; if you want to thicken it, add 1 tablespoon of arrowroot powder or cornstarch and mix well, then pour into the baking dish.
3-In a separate bowl, mix 1 1/2 cups of oats, 1 cup of finely chopped sliced almonds, 1 1/2 cups of almond flour, and 1/4 teaspoon of salt.
4-Stir in 1/2 cup of a sweetener, 1/2 cup of melted coconut oil, and 1 teaspoon of almond extract until the mixture is well combined and resembles coarse crumbs.
5-Spread the cherry mixture evenly in the baking dish.
6-Sprinkle the oat and almond topping evenly over the cherries, making sure most of the fruit is covered.
7-Bake for 55 to 60 minutes, or until the topping turns golden brown; for extra crispness, broil for a few minutes, then let it cool for 15 minutes before serving.
