– 6 slices bacon, diced
– 1 tablespoon olive oil (or avocado oil)
– 1 large onion, diced
– 1.5 pounds chicken, cut into bite-sized pieces
– Garlic powder, to taste
– Cajun seasoning, to taste (preferably a no-salt version)
– All-purpose chicken seasoning, to taste
– 1 teaspoon paprika
– Salt and pepper, to taste
– 1 cup long grain white rice (not quick-cooking or instant rice)
– 1 packet ranch seasoning mix
– 2.5 cups chicken broth (low-sodium preferred; vegetable broth can be used as a substitute)
– 1 cup shredded cheddar cheese (preferably freshly shredded for better melting)
Instructions
1-Cook the 6 slices of diced bacon in a large skillet over medium-high heat until fully cooked. Remove the bacon and drain excess grease from the pan.
2-Add the 1 large diced onion, 1.5 pounds of chicken cut into bite-sized pieces, garlic powder to taste, cajun seasoning to taste, all-purpose chicken seasoning to taste, 1 teaspoon paprika, salt to taste, and pepper to taste to the skillet. Pour in 1 tablespoon of olive oil (or avocado oil) and cook until the chicken is golden brown on all sides.
3-Add the 1 cup of long grain white rice, 1 packet of ranch seasoning mix, and 2.5 cups of chicken broth to the skillet.
4-Bring the mixture to a boil, then reduce the heat to medium-low. Cover and simmer for 17-20 minutes, or until the rice is tender.
5-Remove from heat and stir in the cooked 6 slices of bacon and 1 cup of shredded cheddar cheese until the cheese melts.
6-Serve hot, optionally adding extra shredded cheddar cheese on top.
