Scale

1 pound Argentinian chorizo Provides the hearty, spicy base for the sandwich.

Pieces of French baguette cut to the length of the chorizo Offers a crunchy yet soft bread to hold everything together.

1 cup chimichurri sauce Adds a tangy, herbaceous kick to enhance the overall flavor.

1 large finely diced tomato Used in the fresh salsa criolla for a sweet and juicy element.

1 small finely diced sweet onion Brings a mild, aromatic crunch to the salsa criolla.

1 teaspoon kosher salt Seasons the salsa criolla perfectly.

3 tablespoons olive oil Incorporated into the salsa criolla and for grilling, adding healthy fats and moisture.

1 teaspoon red wine vinegar Gives the salsa criolla its bright, acidic tang.

1 tablespoon olive oil Specifically for drizzling inside the baguette before grilling, to help toast it lightly.

Instructions

1-Set the grill: First, set the grill to medium-high direct heat to get that ideal cooking temperature.

2-Prepare salsa criolla: While the grill heats, combine the salsa criolla ingredients 1 large finely diced tomato, 1 small finely diced sweet onion, 1 teaspoon kosher salt, 3 tablespoons olive oil, and 1 teaspoon red wine vinegar and set them aside at room temperature to let the flavors meld.

3-Grill the chorizo: Next, grill the 1 pound of Argentinian chorizo, turning it frequently for a good char, then butterfly it by slicing lengthwise for even more flavor.

4-Prepare the bread: After that, slice the pieces of French baguette like hot dog buns and drizzle the inside with 1 tablespoon olive oil.

5-Grill bread and chorizo: Place both the chorizo and the bread cut side down on the grill to char and toast lightly, adding that extra texture everyone loves.

6-Spread chimichurri: Spread the chimichurri sauce on the chorizo before it finishes cooking, then assemble the sandwich while it’s hot, topping it with the chimichurri and fresh salsa criolla for a burst of taste in every bite.
