1 cup coconut, divided

1 cup flour

1 1/4 cups confectioners’ sugar, divided

Pinch of salt

6 tablespoons butter, softened

1 teaspoon vanilla

4 teaspoons milk for glaze

Instructions

1-First, grind half a cup of the coconut in a food processor to create a fine texture. Then, chop the remaining half cup of coconut and set it aside for later.

2-Next, add the ground coconut, flour, 1/4 cup of the confectioners’ sugar, and the pinch of salt to the food processor, pulsing until well blended.

3-After that, incorporate the softened butter and vanilla, pulsing again until the dough forms. Shape the dough into 1-inch balls and place them 1 inch apart on an ungreased baking sheet don’t forget to preheat your oven to 350 degrees Fahrenheit. Bake for 15 minutes until the cookies are firm but tender, then let them cool completely on a rack.

4-For the finishing touch, stir together the remaining 1 cup of confectioners’ sugar with up to 4 teaspoons of milk to make a thick glaze. Dip each cooled cookie into the glaze and immediately coat it with the reserved chopped coconut. Let the glaze dry fully before serving these steps make your coconut cookies irresistible and perfect for any occasion.
