β˜• This Coffee Cake Recipe offers a moist texture and comforting cinnamon-sugar flavor, perfect for any breakfast or dessert occasion.
🍰 Made with simple ingredients, it’s easy to prepare and versatile, allowing delicious fruit or nut additions for extra taste and texture.

  • Total Time: 55 minutes
  • Yield: 12 servings

Ingredients

– 2 large eggs, lightly beaten

– 1 cup vegetable oil (or substitute with applesauce, melted coconut oil, canola oil, melted butter, or olive oil suitable for baking)

– 1ΒΌ cups milk

– 1 tablespoon vanilla extract

– 3 cups all-purpose flour (gluten-free flour can also be used)

– 1 cup granulated sugar

– 1 tablespoon baking powder

– Β½ teaspoon salt

– 1ΒΌ cups packed light brown sugar (dark brown sugar may be used)

– 1 tablespoon ground cinnamon (optional: nutmeg or allspice)

– ΒΌ to β…“ cup unsalted butter, melted

– Optional: 1Β½ cups blueberries, chopped apples, or strawberries

– Optional crunchy topping: sliced almonds, chopped pecans, or walnuts

Instructions

1-First, preheat your oven to 350Β°F and lightly grease a 9Γ—13-inch baking dish. This step gets things ready for even baking and prevents sticking.

2-Next, in a large bowl, combine the eggs, oil, milk, and vanilla extract. Mixing these wet ingredients first helps them blend well for a smooth batter base.

3-Then, in another bowl, whisk together flour, granulated sugar, baking powder, and salt. This dry mix ensures all the powders distribute evenly.

4-After that, add the dry ingredients to the wet ones and mix well. Be gentle to keep the batter from getting tough.

5-Now, pour half of the batter into the prepared baking dish. This creates the first layer for that signature swirl.

6-In a medium bowl, mix the brown sugar and cinnamon, then sprinkle half of this mixture evenly over the batter. It’s what gives the cake its delicious cinnamon hit.

7-Carefully pour the remaining batter on top, followed by sprinkling the rest of the cinnamon sugar mixture and drizzling the melted butter evenly. This builds the layers that make every bite special.

8-Finally, bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Total preparation time is 55 minutes, with 15 minutes for prep and 40 for baking. Let it cool a bit before serving warm it’s best that way!
