๐Ÿ”ฅ Warm up with this Slow Cooker Buffalo Chicken Chili that combines spicy buffalo flavors with a creamy, comforting texture.
๐Ÿฒ This recipe is a convenient, one-pot meal perfect for busy days, packing protein and veggies into a hearty bowl of chili.

  • Total Time: 4 hours 10 minutes (HIGH) or 8 hours 10 minutes (LOW)
  • Yield: 6 servings 1x

Ingredients

Scale

1 pound ground chicken

15 oz canned white navy beans, drained and rinsed

14.5 oz can fire-roasted tomatoes, drained

2 cups chicken broth

1/4 to 1/2 cup buffalo wing sauce, start with 1/4 cup and adjust to taste

1 cup frozen corn kernels

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon celery salt

1/2 teaspoon dried cilantro

1/4 teaspoon salt

8 oz cream cheese

Blue cheese crumbles (optional topping)

Instructions

1-Brown the 1 pound of ground chicken thoroughly in a pan, then transfer it to the slow cooker for that essential protein base.

2-Add the 15 oz canned white navy beans (drained and rinsed), 14.5 oz can fire-roasted tomatoes (drained), 2 cups chicken broth, 1/4 to 1/2 cup buffalo wing sauce, 1 cup frozen corn kernels, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon celery salt, 1/2 teaspoon dried cilantro, and 1/4 teaspoon salt. Stir all these together gently in the slow cooker.

3-Place the 8 oz block of cream cheese on top of the mixture without stirring it in, then cover the slow cooker to let it work its magic.

4-Cook on the HIGH setting for 4 hours or on the LOW setting for 8 hours, allowing the ingredients to blend into a creamy delight.

5-After cooking, stir the chili vigorously until the cream cheese fully melts and incorporates throughout for that smooth texture.

6-Taste the chili and adjust the buffalo wing sauce if you want more spice, building on that initial 1/4 cup for perfect flavor.

7-Serve it hot, and if you like, top with blue cheese crumbles for an extra layer of tang.
