Ingredients

– 1 10-ounce bag fresh spinach, roughly chopped

– 1 14-ounce can artichoke hearts, roughly chopped

– 1 8-ounce block cream cheese, cut into cubes

– 1 cup sour cream

– 1 cup shredded mozzarella cheese

– 1/2 cup shredded Parmesan cheese

– 4 cloves minced garlic

– Salt and pepper to taste

Instructions

1-First Step: Prep your ingredients Roughly chop your fresh spinach (or thaw frozen spinach completely). If using frozen spinach, drain it well and squeeze out extra liquid using a clean kitchen towel or cheesecloth. Roughly chop your artichoke hearts and cut the cream cheese into cubes so it melts faster.

2-Second Step: Add everything to the crock pot Place the chopped spinach, artichoke hearts, cream cheese cubes, sour cream, mozzarella, Parmesan, and minced garlic into a small crock pot. Stir everything until the cheeses and cream cheese begin to look evenly distributed.

3-Third Step: Cook on LOW Cover the crock pot and cook on LOW for 2 hours. After 1 hour, stir halfway through so the cream cheese and cheeses melt smoothly without lumps.

4-Fourth Step: Check texture and season At the 2-hour mark, give the dip a final stir. Taste it and adjust with salt and pepper to taste. If you love a little kick, this is a great time to add red pepper flakes or hot sauce.

5-Final Step: Serve hot and dippable Serve the dip with crackers or chips. If you want it ready for guests, you can keep it warm on the slow cooker β€œwarm” setting for 2 to 3 hours, stirring occasionally to keep it silky. The dip is also a great make-ahead option and reheats well.
