Ingredients
– 14.3 oz package (36 cookies) golden sandwich cookies, crushed into crumbs
– 8 oz cream cheese, room temperature
– 10 oz white candy coating for dipping
– Additional 1 oz white candy coating per color for decorating
– Gel food coloring for coloring the candy coating
Instructions
1-Crush the golden sandwich cookies into fine crumbs using a food processor or blender.
2-Mix the cookie crumbs with room temperature cream cheese until well combined and easy to form into balls.
3-Shape the mixture into Easter egg shapes, using about 1 1/2 tablespoons per egg.
4-Chill the shaped eggs in the refrigerator for about 1 hour to firm up.
5-Melt 10 ounces of white candy coating and dip the chilled eggs into it, using a toothpick inserted into the bottom of the egg for dipping. Shake off excess coating and place on parchment paper to dry. Use a small dab of candy coating to fill the hole left by the toothpick.
6-For decoration, melt additional white candy coating one color at a time and mix with gel food coloring to achieve desired hues. Drizzle or pipe the colored coatings over the eggs. Use about 1 ounce of candy coating per color.
7-Store the finished eggs in the refrigerator; follow storage tips later to keep them fresh.
