1 tablespoon kosher salt

2 tablespoons black pepper

1/2 teaspoon ground thyme

2 whole large onions, thinly sliced

5 cloves garlic, minced

1 packet dry French onion soup mix

1 can beef consommΓ© (approximately 10.5 ounces / 300g)

1 cup beef broth or beef stock (approximately 240ml)

1/4 cup dry sherry or white wine (optional, approximately 60ml)

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 cup water (approximately 240ml)

10 crusty deli rolls or sub rolls, toasted

Instructions

1-Preheat oven to 475Β°F (245Β°C).

2-Tie the beef roast securely with kitchen twine.

3-Combine salt, black pepper, oregano, and thyme; rub over the beef.

4-Roast the beef until medium-rare.

5-Rest the beef, then prepare the au jus by cooking onions and garlic in the pan.

6-Simmer the liquids and strain the jus.

7-Assemble sandwiches with beef and onions on toasted rolls.
