1 carrot, peeled and grated

1 teaspoon parsley or chives, very finely chopped (optional)

1 tablespoon cider vinegar or any vinegar or lemon juice

3 tablespoons extra virgin olive oil or other neutral oil

Half teaspoon Dijon mustard or other non-spicy smooth mustard

Half teaspoon cooking/kosher salt or quarter teaspoon table salt

Half teaspoon black pepper

Instructions

1-Wash and dry all fresh vegetables thoroughly to ensure cleanliness and crispness. Use a salad spinner for best results to keep everything fresh.

2-Chop the mixed leafy greens into bite-sized pieces, and slice cherry tomatoes, cucumber, and red onion as specified to prepare all ingredients uniformly.

3-In a large salad bowl, combine the leafy greens, tomatoes, cucumber, red onion, and shredded carrots, mixing gently.

4-Combine all dressing ingredients in a jar and shake well. Taste and adjust as needed by adding more oil for creaminess, more vinegar for tanginess, or a pinch of sugar for sweetness.

5-Pour the dressing over the salad components and toss gently to ensure even coating without bruising the vegetables.

6-Add any optional toppings like parsley or chives, distributing them evenly for extra flavor.

7-Place all salad ingredients in a large bowl, pour the dressing over them, and toss thoroughly. Transfer the salad to a serving bowl and serve immediately.
