Ingredients

– 2 pounds ground chicken

Instructions

1-Combine all meatball ingredients, including 2 pounds ground chicken, 1 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon ground cumin, 1/2 teaspoon ground oregano, 1/2 teaspoon red pepper flakes, 1/4 cup fresh dill chopped, 1/4 cup fresh mint chopped, 1/4 cup finely diced red onion, 4 cloves garlic finely minced, and 1/2 teaspoon lemon zest, in a large bowl. Mix thoroughly using your hands until well incorporated for even flavor.

2-Portion the mixture using a cookie dough scoop or tablespoon and roll each portion into a meatball shape to keep them uniform and easy to cook.

3-Heat 1 tablespoon olive oil in a large skillet over medium heat, then add the meatballs in batches to avoid crowding the pan.

4-Cook the meatballs for 3-4 minutes per side until they’re browned all over and the internal temperature reaches 165Β°F (74Β°C) for safe eating.

5-Serve the cooked meatballs over a bed of chopped romaine, along with feta cheese, cucumber, tomato, white rice, and tzatziki sauce for a complete meal.
