Instructions
1-Start by soaking wooden skewers in water for 10 minutes to prevent them from burning on the grill.
2-In a large bowl, whisk together 1/4 cup olive oil, 2 tablespoons red wine vinegar, juice of 1 whole lemon, 1 teaspoon honey, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon ground black pepper, and 1/4 teaspoon kosher salt to create the marinade.
3-Toss 2 small zucchinis (cut into 1/2 inch discs), 1 small red onion (cut into quarters), 2 bell peppers (cut into chunks), and 1 pint cherry tomatoes (whole) in the marinade. Let them sit for up to 30 minutes, but keep the halloumi cheese out of the marinade to avoid it getting too soft.
4-Preheat your grill to 400ยฐF for that perfect sear on your grilled halloumi skewers.
5-Skewer the 2 packs (8 oz each) of halloumi cheese cubes alternately with the marinated vegetables. Use a gentle twisting motion to thread the halloumi and avoid breakage, then brush the skewers with any leftover marinade.
6-Place the skewers on the grill, spacing them a few inches apart. Grill one side for 5-7 minutes until the halloumi starts to char, and use a spatula to loosen it before flipping with tongs.
7-Grill the other side for another 5 minutes until everything is nicely charred.
8-Remove the skewers from the grill and serve them warm for the best taste.
