4 nectarines, pitted and quartered

8 ounces burrata cheese, torn

8 slices prosciutto

4 ounces cherry tomatoes, halved

2 heirloom tomatoes, halved and cut into eighths

1/2 cup fresh cherries, pitted and halved

1/2 cup mixed baby spring greens

Fresh ground black pepper to taste

Grilled baguette for serving

2 tablespoons fresh lemon juice (for the vinaigrette)

1 tablespoon white wine vinegar (for the vinaigrette)

1 tablespoon lemon zest (for the vinaigrette)

1 tablespoon fresh oregano, roughly minced (for the vinaigrette)

1 tablespoon fresh mint, roughly minced (for the vinaigrette)

1 tablespoon fresh lemon thyme leaves (for the vinaigrette)

1/2 cup extra virgin olive oil (for the vinaigrette)

Pinch of salt (for the vinaigrette)

Fresh ground black pepper as desired (for the vinaigrette)

Instructions

1-Preheat the grill or a grill pan over medium-high heat.

2-Slice the nectarines into eighths and lightly brush with olive oil.

3-Grill the nectarine slices for 2-3 minutes on each side until grill marks appear and the fruit softens, then remove and let cool.

4-In a small bowl, whisk together the vinaigrette ingredients and set aside.

5-In a large salad bowl, toss the mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette.

6-Top with the torn burrata and prosciutto, then sprinkle with fresh herbs and black pepper as desired.

7-Serve with toasted baguette for a complete meal.
