6 fresh peaches, ripe but firm

Olive oil for brushing peaches

½ cup fresh blueberries

½ cup fresh blackberries

5 ounces mixed greens (such as baby spinach, arugula, or romaine lettuce)

½ cup feta cheese crumbles

¼ cup light brown sugar

1 tablespoon water

1 cup pecan halves

A pinch of salt

2 tablespoons balsamic vinegar

⅓ cup extra virgin olive oil

1 clove garlic, finely minced

1 to 2 tablespoons honey (to taste)

½ teaspoon Dijon mustard

Salt and pepper to taste

Instructions

1-Prepare the candied pecans by melting ¼ cup light brown sugar with 1 tablespoon water over medium-low heat in a skillet. Add 1 cup pecan halves and a pinch of salt, stirring to coat for 1-2 minutes. Transfer to a plate and let cool.

2-Make the honey balsamic dressing by combining 2 tablespoons balsamic vinegar, ⅓ cup extra virgin olive oil, 1 clove garlic (finely minced), 1 to 2 tablespoons honey (to taste), ½ teaspoon Dijon mustard, and salt and pepper to taste in a jar. Seal and shake vigorously until mixed.

3-Cut 6 fresh peaches into halves or thick wedges, removing the pits. Preheat a grill to medium-high heat and oil the grates. Brush the peaches with olive oil on both sides.

4-Grill the peaches cut-side down for 2-3 minutes without moving to create grill marks. Flip using a thin spatula and grill the other side for an additional 2-3 minutes.

5-Assemble the salad by arranging 5 ounces of mixed greens on a platter, then topping with the grilled peaches, ½ cup fresh blueberries, ½ cup fresh blackberries, the candied pecans, and ½ cup feta cheese crumbles. Drizzle with the honey balsamic dressing.

First, preheat your grill to medium-high heat (around 375°F). While the grill heats, wash and dry the mixed greens; halve and pit the peaches. Brush the peach halves with olive oil to prevent sticking. Place them on the grill, cut side down, and grill for 3-4 minutes until grill marks appear and peaches are slightly softened.

Flip the peaches gently and grill the skin side for an additional 2-3 minutes. Remove from the grill and let them cool slightly before slicing. In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese. Toss them lightly to mix. Prepare the dressing by whisking olive oil, balsamic vinegar, salt, and pepper in a small bowl. Adjust seasoning as per taste. Add the sliced grilled peaches to the salad mixture. Drizzle the dressing over the top and toss gently to coat evenly. Transfer the salad to a serving platter or individual bowls. Garnish with extra pecans or fresh herbs if desired. Serve immediately to enjoy the contrast of warm peaches and cool greens.
