Ingredients
1 โ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon fine sea salt
ยฝ cup plus 2 tablespoons unsalted butter, melted
ยฝ cup light brown sugar, firmly packed
ยฝ cup plus 1 tablespoon granulated sugar
1 cup creamy peanut butter (full sugar)
1 large egg
1 teaspoon vanilla extract
About 60 unwrapped chocolate kisses
Instructions
1-Preheat oven to 350ยฐF (175ยฐC) and line a cookie sheet with parchment paper or a silicone baking mat. In a bowl, whisk together the flour, baking powder, and sea salt; set aside. Using a mixer, beat the melted butter, brown sugar, granulated sugar, and peanut butter at medium-high speed until combined.
2-Add the egg and vanilla extract, mixing well. Gradually add the dry ingredients on low speed, mixing just until incorporated. Scrape down the bowl and mix for another 30 seconds on low. Scoop scant tablespoon portions of dough and roll into balls. Place the balls about 1 inch apart on the prepared baking sheet.
3-Bake for 10 minutes. Remove from the oven and transfer cookies to a cooling rack. Immediately press a chocolate kiss gently into the center of each warm cookie. Let cool for 5 to 10 minutes before serving. This method keeps the cookies chewy and the chocolate just right, perfect for enjoying right away.

๐ง Use unsalted butter to control saltiness and maintain a balanced flavor.
๐ซ Always unwrap chocolate kisses before baking to prevent breakage when pressing into hot cookies.
โฒ๏ธ For chewier, fluffier cookies, use baking powder as the leavening agent instead of baking soda.
