🍝 This Instant Pot Creamy Tuscan Chicken Pasta offers a rich and comforting meal with tender chicken, creamy sauce, and fresh spinach.
🌿 It’s a convenient one-pot recipe that combines bold flavors and easy cleanup, perfect for busy weeknights.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

– 1 liter (32 oz) low-sodium chicken broth

– 1/2 cup oil-packed sun-dried tomatoes with herbs (drained and chopped)

– 2 teaspoons Italian seasoning

– 1 tablespoon garlic

– 450 grams (1 lb) boneless skinless chicken breasts cut into 1-inch cubes

– 340 grams (12 oz) uncooked campanelle pasta

– 140 grams (5 oz) baby spinach

– 225 grams (8 oz) light cream cheese cut into cubes and softened

– 1 cup finely shredded Parmesan cheese

– 1/4 cup fresh basil

Instructions

1-First, combine the chicken broth, sun-dried tomatoes, Italian seasoning, garlic, salt, and pepper in the Instant Pot insert. This step builds the flavorful base that makes the dish so tasty.

2-Next, add the diced chicken and dry pasta, ensuring everything is evenly distributed.

3-Then, cover and seal the Instant Pot with the valve set to sealing. Cook on manual pressure for 5 minutes to get that perfect tender texture.

4-After cooking, perform a quick release to let the pressure out safely.

5-Stir in the spinach, cream cheese, and Parmesan cheese next, and let the mixture rest for 5 to 10 minutes so it thickens up nicely.

6-Finally, toss in the fresh basil just before serving for a burst of color and flavor.

Notes

🌿 Frozen spinach that’s thawed and drained works well as a substitute for fresh spinach.
πŸ§€ Regular cream cheese can replace light cream cheese for a richer dish.
🍝 Swap campanelle pasta with cavatappi, bowtie, or penne for variety.
πŸ„ Add diced mushrooms, onions, or cherry tomatoes for extra flavor.
⏲️ When increasing pasta quantity, remember to add extra water and adjust cooking time accordingly.
