Instructions
-First, prepare the dough: Whisk the 2 1/4 cups of flour, 2 teaspoons of baking powder, and 1/4 teaspoon of salt in a small bowl. In another bowl, beat the 1/2 cup of sugar and 1/2 cup of softened butter with an electric mixer until fluffy, about 2 minutes. Add the 3 large eggs one at a time, then mix in the 1.5 teaspoons of almond extract. Gradually stir in the flour mixture until just combined.
-Next, shape and chill: Roll the dough into tablespoon-sized balls and place them on a parchment-lined baking sheet, spacing them 1 inch apart. Chill in the refrigerator for at least 1 hour to keep them from spreading.
-Then, bake: Preheat your oven to 350ยฐF. Bake the cookies for 10 12 minutes until they are set but not browned. Let them cool completely on a wire rack.
-Finally, frost and decorate: Whisk together 2 cups of powdered sugar, 2 to 3 tablespoons of milk, and 1 teaspoon of almond extract until smooth. Dip or pour the frosting over the cooled cookies and immediately add the 4 tablespoons of sprinkles while the frosting is still wet. Let everything set before serving.
