Instructions

1-Rim each glass by first dipping the rim into light corn syrup and then dipping it into the sweetened coconut flakes for a fun, tropical edge.

2-Combine the ice, pineapple juice, cream of coconut, and 6 to 8 drops of blue food coloring in a blender.

3-Blend the mixture until it reaches a smooth consistency, and feel free to add more food coloring drops if you want a deeper blue shade.

4-Pour the blended mixture immediately into the prepared coconut-rimmed glasses and serve right away for the best flavor.
