Instructions

1-Step 1: Preheat and set up your noodles. First Step: Preheat your oven to 375ยฐF. Cook the lasagna noodles in salted water until al dente, then drain and cool in cold water. Once they are cool, lay the noodles out to dry slightly so they are easier to roll. If you can, place cooked noodles on a clean kitchen towel or parchment paper. This keeps them from sticking and makes assembly cleaner.

2-Step 2: Cook the meat sauce. Second Step: Make the meat sauce. Cook ground beef until no longer pink, then add the diced onion and cook until softened. Next, add minced garlic, salt, pepper, oregano, and marinara sauce. Then: simmer briefly and remove from heat. You are aiming for a sauce that is flavorful and ready to spoon.

3-Step 3: Prep the cheese filling. Third Step: Mix the cheese filling in a bowl. Combine ricotta, egg, Parmesan, 1 1/2 cups mozzarella, and chopped parsley. Stir until smooth and cohesive. If the filling looks too loose, letting it sit for a few minutes can help it thicken slightly before rolling.

4-Step 4: Assemble the roll-ups. Fourth Step: Spread 1/2 cup meat sauce in the bottom of a casserole dish. Lay the noodles on a baking sheet so assembly stays tidy.
