Ingredients

– 1 cup buttermilk at room temperature

– 1 cup all-purpose flour

– 1 1/4 teaspoons baking powder

– 1 teaspoon vanilla extract

– 1/4 teaspoon kosher salt

– 1 cup store-bought or homemade lemon curd

Instructions

1-First, preheat the oven to 350ยฐF. Melt the unsalted butter in an 8ร—8-inch baking dish in the oven for about 4 to 5 minutes, or melt it in the microwave and pour it into the dish.

2-In a large bowl, whisk together 1 cup all-purpose flour, 3/4 cup granulated sugar, 1 tablespoon finely grated lemon zest, and 1 1/4 teaspoons baking powder.

3-Slowly add 1 cup buttermilk, 1 teaspoon vanilla extract, and 1/4 teaspoon kosher salt, whisking until combined with some small lumps.

4-Pour the batter into the prepared baking dish without stirring. Evenly dollop 1 cup lemon curd over the batter.

5-Bake for 40 to 45 minutes, until golden-brown and bubbling at the edges. Let the cobbler cool for at least 20 minutes before serving to allow the lemon curd to set.

6-Serve warm or at room temperature, perhaps with a side of fresh berries for added zest.
