Ingredients

– 10 ounces baby spinach

– 1 can (about 15 ounces) mandarin oranges, drained

– 4 fresh peeled and sectioned mandarins

– 1/4 cup thinly sliced red onion

– 1/2 cup goat cheese crumbles

– 1/2 cup sliced almonds (toasted)

– 1/2 cup dried cranberries

– 1/2 cup olive oil

– 1/4 cup balsamic vinegar

– 1 to 2 tablespoons honey

– 2 teaspoons Dijon mustard

– Sea salt and pepper to taste

Instructions

1-Wash and dry 10 ounces of baby spinach to start with a clean, crisp base.

2-Prepare the mandarin oranges by draining 1 can (about 15 ounces) or peeling and sectioning 4 fresh ones.

3-Add 1/4 cup thinly sliced red onion, 1/2 cup goat cheese crumbles, 1/2 cup toasted sliced almonds, and 1/2 cup dried cranberries to the bowl.

4-In a separate small bowl, mix 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 to 2 tablespoons honey, and 2 teaspoons Dijon mustard until emulsified.

5-Pour the dressing over the salad and gently toss to coat all ingredients evenly.

6-Season with sea salt and pepper to taste, then serve immediately for the freshest taste.
