Ingredients

– 1 teaspoon salt

– 2 large eggs

– 3 garlic cloves, minced

– 2 tablespoons ketchup

– 3 tablespoons fresh parsley, finely chopped

– 3/4 cup Panko breadcrumbs or gluten-free breadcrumbs

– 1/3 cup milk

– 1 teaspoon Italian seasoning (or to taste)

– 1 teaspoon black pepper

– 1/2 teaspoon ground black pepper

– 3/4 cup ketchup

– 1 1/2 teaspoons white vinegar

– 2 tablespoons brown sugar

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

Instructions

1-Preheat oven: Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or foil for easy cleanup.

2-Sauté onions: Sauté chopped onions in 1 teaspoon oil over medium heat for 5-7 minutes until softened and golden. Set aside to cool.

3-Combine ingredients: In a large bowl, combine ground beef, sautéed onions, salt, eggs, minced garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, and black pepper. Mix until just combined to keep meatloaf tender.

4-Shape loaf: Shape mixture into a loaf approximately 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.

5-Bake initially: Bake uncovered for 40 minutes at 350°F (175°C).

6-Prepare glaze: Prepare the glaze by mixing ketchup, white vinegar, brown sugar, garlic powder, and onion powder until well combined.

7-Glaze and bake further: Spread the glaze evenly over the meatloaf and bake an additional 20 minutes or until the internal temperature reaches 160°F (71°C). For turkey or chicken, cook to 165°F (74°C).

8-Rest meatloaf: Let meatloaf rest for 10-15 minutes before slicing to redistribute juices and improve moisture.
