๐Ÿฅ™ These authentic Greek chicken gyros deliver tender, marinated chicken with refreshing tzatziki sauce for a restaurant-quality Mediterranean meal at home
๐ŸŒฟ The simple marinade and fresh herbs create incredible flavor depth while the creamy yogurt sauce provides the perfect cooling contrast

  • Total Time: 26 minutes (plus marinating time)
  • Yield: 4 servings

Ingredients

– 2 lb (1 kg) boneless, skinless chicken thigh fillets

– 3 large garlic cloves, minced (about 3 tsp)

– 1 tbsp white wine vinegar (or red wine or apple cider vinegar)

– 3 tbsp lemon juice

– 1 tbsp extra virgin olive oil

– 3 tbsp Greek yogurt, preferably full fat

– 1 1/2 tbsp dried oregano

– 1 tsp salt

– Black pepper to taste

– 2 cucumbers (to yield about 1/2 to 3/4 cup grated cucumber after squeezing out juice)

– 1 1/4 cups Greek yogurt, preferably full fat

– 1 tbsp lemon juice

– 1 tbsp extra virgin olive oil (or more for richer taste)

– 1 garlic clove, minced

– 1/4 tsp salt

– Black pepper to taste

– 3 tomatoes, deseeded and diced

– 3 cucumbers, diced

– 1/2 red Spanish onion, peeled and finely chopped

– 1/4 cup fresh parsley leaves (optional)

– Salt and pepper to taste

– 4 to 6 pita breads or flatbreads

Instructions

1-Start by prepping the marinade to give your chicken that incredible flavor boost.

2-Once that’s done, you’ll move on to the tzatziki and other steps for a meal that’s ready in no time.

3-First, combine the marinade ingredients in a sealable bag, mix well, and add the chicken.

4-Massage to coat the chicken evenly, then let it marinate for at least 2 hours, ideally 3 to 12 hours, for the best taste.

5-While the chicken marinates, prepare the tzatziki sauce by halving the cucumbers lengthwise, scraping out the seeds, grating them coarsely, and squeezing out excess liquid.

6-Mix the grated cucumber with Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper, then let it rest for 20 minutes.

7-Next, combine the diced tomatoes, cucumbers, red onion, parsley, salt, and pepper to make the fresh salad.

8-Heat a grill or frying pan with 1 tbsp oil over medium-high heat, cook the chicken for 2 to 3 minutes per side until golden and fully cooked, and let it rest for 5 minutes.

9-Finally, assemble the gyros by placing the salad on warmed pita bread, adding sliced chicken, and topping with tzatziki.

10-Roll up the gyros and serve with extra salad and sauce on the side for a complete, customizable dish.

Notes

๐Ÿฅ› Full-fat Greek yogurt in the marinade tenderizes chicken and enhances flavor infusion – don’t skip this key ingredient for authentic taste
๐Ÿฅ’ Squeeze as much liquid as possible from the grated cucumber for tzatziki – this prevents watery sauce and ensures the perfect creamy consistency
๐Ÿ”ฅ Let the chicken rest after cooking for 5 minutes before slicing – this keeps the juices inside and makes the meat more tender and flavorful
