Ingredients

– 2 (15-ounce) cans of chickpeas, drained and rinsed

– 1 large diced cucumber

– 1 diced red bell pepper

– 2 cups of halved cherry tomatoes

– 1/4 cup of diced red onion

– 4 ounces of crumbled feta cheese

– 1/4 cup of finely chopped parsley

– Lemon vinaigrette dressing added according to taste (made with lemon juice and olive oil for a light, fresh flavor)

– Dried and soaked chickpeas

– Vegan feta or tofu

Instructions

1-Rinse and drain 2 (15-ounce) cans of chickpeas thoroughly.

2-Dice 1 large cucumber and 1 red bell pepper.

3-Halve 2 cups of cherry tomatoes and dice 1/4 cup of red onion.

4-In a large bowl, mix the chickpeas, diced cucumber, red bell pepper, halved cherry tomatoes, diced red onion, 4 ounces of crumbled feta cheese, and 1/4 cup of finely chopped parsley.

5-Prepare the lemon vinaigrette by whisking together lemon juice, olive oil, and a pinch of seasoning, then pour it over the mixture.

6-Gently toss everything to combine without breaking up the feta.

7-Serve immediately or chill for a few minutes to let the flavors meld.
