Ingredients
– 200g / 7 oz short pasta such as orecchiette, penne, or macaroni, or 160g / 6 oz long pasta like spaghetti or fettucine
– 400g / 14 oz mushrooms, sliced about 1/2 cm thick
– 50g / 3 tbsp unsalted butter, divided
– 1 tbsp olive oil
– 2 garlic cloves, finely minced
– 1/2 tsp salt
– 1/2 tsp pepper
– 1/2 cup freshly grated parmesan cheese (or 1/4 cup store-bought grated Parmesan)
– Fresh parsley, finely chopped for serving
– Additional parmesan cheese, grated for serving
Instructions
1-First Step: Bring a large pot of salted water to a boil. Start your pasta when you begin mushrooms so everything finishes around the same time.
2-Second Step: Cook pasta according to package instructions minus 1 minute. Reserve one mug of pasta cooking water, then drain pasta.
3-Third Step: Melt half of the butter and all the olive oil in a large skillet over medium heat.
4-Fourth Step: Add mushrooms and cook until water is released and evaporated, mushrooms start to turn golden around edges, about 5 minutes. Add salt and pepper halfway through.
5-Fifth Step: Add garlic and the remaining butter, then cook 2 more minutes until mushrooms and garlic are golden.
6-Sixth Step: Add pasta, about 3/4 cup reserved pasta water, and parmesan cheese. Toss gently until water reduces and thickens into a glossy sauce coating the pasta. Add more pasta water if pasta dries out.
7-Seventh Step: Adjust seasoning with salt and pepper if needed.
8-Final Step: Remove from heat and serve immediately topped with fresh parsley and more parmesan.
