๐Ÿซ Silky Nutella and cream cheese blend into fudgy truffles coated in cocoa, delivering intense chocolate-hazelnut joy with zero baking.

๐Ÿฅ„ Ready in 15 minutes plus chill time, they’re effortless for holidays, parties, or midnight treats everyone adores!

  • Total Time: 1 hour 45 minutes
  • Yield: 24 truffles

Ingredients

– 8 oz high-quality dark chocolate (60-70% cocoa) for rich chocolate base

– 1/2 cup Nutella spread for hazelnut flavor and creamy texture

– 1/2 cup heavy cream for smooth glossy ganache

– Unsweetened cocoa powder for coating

– Finely chopped hazelnuts for nutty crunch

– Powdered sugar for sweet coating

Instructions

1-First Step: Gather and Prep Your Ingredients Before you start, ensure you have all your ingredients measured and ready. This is often called mise en place in the cooking world. Chop your 8 oz of dark chocolate into small, even pieces. Small pieces melt more evenly and quickly, preventing the chocolate from seizing. Ensure your Nutella is at room temperature; cold Nutella can create lumps in your smooth ganache. Line a baking sheet or tray with parchment paper. This prevents the truffles from sticking once they are rolled and makes cleanup a breeze. Having your coatings ready cocoa powder in one bowl, chopped nuts in another will streamline the rolling process later.

2-Second Step: Heat the Cream Pour the 1/2 cup of heavy cream into a small saucepan. Place it over medium heat. You want to heat the cream until it just begins to simmer. Look for small bubbles forming around the edges of the pan and a little steam rising. Do not let it come to a rolling boil, as this can scorch the cream or separate the fats when added to the chocolate. If you prefer, you can heat the cream in the microwave in 30-second intervals, stirring in between, until hot.

3-Third Step: Create the Ganache Remove the heated cream from the stove immediately once it simmers. Pour the hot cream directly over your chopped dark chocolate in a heat-proof bowl. Let it sit undisturbed for about 2 to 3 minutes. This allows the heat from the cream to gently warm the chocolate. After the waiting period, whisk the mixture slowly. Start from the center and work your way outward until the chocolate is completely melted and the mixture is smooth and glossy.

4-Fourth Step: Incorporate the Flavor Once your chocolate mixture is smooth, add the 1/2 cup of Nutella. If you are using optional ingredients like 1 tsp of vanilla extract or a pinch of sea salt, add them now as well. Stir gently until the Nutella is fully incorporated and the color is uniform. The mixture should be thick, shiny, and smell heavenly. This step is what transforms a standard chocolate ganache into homemade nutella truffles. Make sure there are no streaks of white chocolate remaining.

5-Fifth Step: Chill the Mixture Cover the bowl with plastic wrap. Press the wrap directly onto the surface of the ganache to prevent a skin from forming. Place the bowl in the refrigerator. You need to chill it for at least 2 hours. The mixture needs to be firm enough to scoop and roll into balls without losing its shape. If you are in a hurry, you can place it in the freezer for about 45 minutes, but keep an eye on it so it doesn’t freeze solid.

6-Sixth Step: Scoop and Roll Remove the chilled ganache from the fridge. Use a tablespoon or a small cookie scoop to portion out the mixture. Scooping ensures all your truffles are the same size. Roll each portion between the palms of your hands to form a smooth ball. Tip: If the mixture is sticking to your hands, lightly wet your palms with water or wear food-safe gloves. Work quickly because the warmth of your hands will start to melt the chocolate. If the dough gets too soft, pop the bowl back in the fridge for 10 minutes.

7-Final Step: Coat and Serve Drop each rolled ball into your chosen coating. You can use unsweetened cocoa powder, crushed hazelnuts, or powdered sugar. Gently shake the bowl or use a spoon to cover the truffle completely. Place the coated truffles back onto your parchment-lined tray. Once all are coated, place the tray in the refrigerator for another 30 minutes to firm up the coating. Store them in an airtight container until you are ready to serve. These no bake chocolate nutella truffles are best served slightly chilled for the firmest texture.
