Ingredients

1 1/2 cups granulated sugar

1 1/2 cups light brown sugar, packed

1/4 teaspoon salt

1 cup evaporated milk or half-and-half

6 tablespoons salted butter

1 teaspoon vanilla extract

2 cups pecan halves

1 cup plant-based milk like almond milk

6 tablespoons vegan butter

Instructions

1-Line a baking sheet with parchment paper and set aside.

2-In a medium heavy pot, combine 1 1/2 cups granulated sugar, 1 1/2 cups light brown sugar packed, 1/4 teaspoon salt, 1 cup evaporated milk or half-and-half, and 6 tablespoons salted butter.

3-Cook and stir over medium heat until the sugars dissolve and the mixture boils.

4-Continue cooking until the temperature reaches 235-240Β°F, which is the soft ball stage. Remove from heat and cool for 5 minutes.

5-Stir in 1 teaspoon vanilla extract and 2 cups pecan halves. Beat with a wooden spoon until the candy loses its gloss and thickens, about 2 minutes, but avoid overbeating or underbeating.

6-Quickly drop heaping tablespoons of the mixture onto the lined baking sheet using a cookie dough scoop. If the mixture hardens, add hot water teaspoon by teaspoon and stir.

7-Cool completely until set and firm.
