Instructions
1-Preheat the oven to 450 degrees Fahrenheit: Bring a large pot of water to a boil, then add the potatoes, baking soda, and a few large pinches of salt. Boil for about 10 to 12 minutes until the potatoes are slightly fork-tender.
2-Drain the potatoes and return them to the pot for 1 minute: Transfer the potatoes to a large bowl, drizzle with the 2 tablespoons of olive oil, and season with salt and pepper to taste.
3-Shake the bowl vigorously for several minutes until the potatoes develop a pasty coating: Arrange the potatoes in a single layer on a baking sheet.
4-Roast for 20 minutes, then shake and flip them: Continue roasting for 15 to 20 more minutes, or until they are deeply golden roast longer if needed, checking frequently to avoid burning.
5-Meanwhile, melt the 6 tablespoons of butter in a saucepan over low heat, then add the 4 minced garlic cloves and remove from heat. Chop the โ cup of fresh herbs and combine them.
6-Once the potatoes are done, transfer them to a large plate, drizzle with the garlic butter, and sprinkle the chopped herbs on top. Toss gently and serve immediately for the best flavor!
