3+ cups (311 g) Vanilla wafers or substitutes Provides the base crunch and structure

1 cup (120 g), plus extra Confectioners’ sugar Sweetens and helps with coating

2 tablespoons (10 g) Cocoa powder Adds rich chocolate flavor

2 tablespoons (44 g) White corn syrup or substitute Binds ingredients together smoothly

1/3 cup (74 g), plus more if needed Rum Infuses the boozy taste and moisture

Instructions

1-Crush vanilla wafers into fine crumbs using a food processor or a ziplock bag with a rolling pin.

2-Add confectioners’ sugar (1 cup / 120 g), cocoa powder (2 tbsp / 10 g), and corn syrup (2 tbsp / 44 g). Pulse or mix to combine.

3-Add rum (1/3 cup / 74 g) and pulse or mix until the mixture forms a cohesive mass. Slowly add more rum if needed until the dough holds together.

4-Scoop out dough using a teaspoon or cookie scoop and roll into balls by hand.

5-Roll the balls in confectioners’ sugar and transfer to a storage container.
