– 1 tablespoon soy sauce

– 2 tablespoons olive oil

– 1 sprig fresh thyme or a pinch of dried thyme

– 2 cloves garlic, minced

Instructions

1-Clean mushrooms by gently wiping with a paper towel or mushroom brush and slice into thick slices about half an inch thick.

2-Heat 2 tablespoons butter and 2 tablespoons olive oil in a pan over medium-high heat.

3-Toss 1 pound of mushrooms quickly with 1 tablespoon soy sauce; do not prepare this ahead to avoid excess moisture.

4-Add mushrooms to the pan and cook without stirring for about 4 to 5 minutes to allow browning on one side.

5-Add ΒΌ cup white wine if using and let it evaporate.

6-Add 2 cloves minced garlic and 1 sprig fresh thyme or a pinch of dried thyme, then stir occasionally for another 3 to 4 minutes until mushrooms are cooked.

7-Season with salt and pepper to taste. Garnish with chopped fresh chives if desired.
