  • Total Time: 3 hours 20 minutes
  • Yield: 6 servings

Ingredients

– 1 Β½ pounds boneless beef chuck roast, cut into 1/4-inch strips

– 1 cup low-sodium beef broth

– 1/2 cup low-sodium soy sauce

– 1/3 cup dark brown sugar

– 1 tablespoon sesame oil

– 3 teaspoons minced garlic (about 3 cloves)

– 2 tablespoons cornstarch

– 1 12-ounce bag of frozen broccoli florets (about 3 cups)

– Green onions for garnish

– Sesame seeds for garnish

– White rice for serving

Instructions

1-First, slice 1 Β½ pounds of boneless beef chuck roast into 1/4-inch strips for even cooking. Then, whisk together the sauce by combining 1 cup low-sodium beef broth, 1/2 cup low-sodium soy sauce, 1/3 cup dark brown sugar, 1 tablespoon sesame oil, and 3 teaspoons minced garlic in a bowl. Pour this mixture over the beef in the slow cooker and stir to coat everything well.

2-Once your beef and sauce are in the slow cooker, set it to low and cook for 2.5 to 3.5 hours. About an hour before it’s done, remove 1/4 cup of the sauce, mix it with 2 tablespoons cornstarch, and stir it back in to thicken. In the final 30 minutes, add the 12-ounce bag of frozen broccoli florets and let them cook until tender.

3-Serve your dish over white rice and garnish with green onions and sesame seeds for a nice touch.
