Ingredients

– 1 pound (approximately 450 grams) white beans (Great Northern beans or Navy beans as a substitute)

– 1 pound (approximately 450 grams) smoked ham, diced (leftover holiday ham or any diced ham including honey baked ham)

– 1 medium onion, diced (or 2 tablespoons onion powder)

– 4 celery stalks, diced

– 6 cups (about 1.4 liters) water (can be substituted with chicken or vegetable stock or broth for added flavor)

– 2 teaspoons garlic powder

– 2 teaspoons salt

– 1/2 teaspoon black pepper

– 2 dried bay leaves

– 4 cups cooked rice for serving

– Hot sauce for serving (optional)

Instructions

1-Spread beans on a baking sheet and pick out any stones or debris.

2-Rinse beans thoroughly under running water in a colander.

3-Place all ingredients into the slow cooker, stirring to combine.

4-Cook on low for 7-8 hours or on high for 4-5 hours, until beans are tender.

5-Remove the bay leaves.

6-For a thicker soup, mash some beans against the side of the slow cooker with a spoon or spatula and stir.

7-Serve the soup on its own or over cooked rice with optional hot sauce.
