Ingredients

– 1 (5 ounce) can yellowfin tuna, drained (preferably packed in olive oil)

– 2 tablespoons finely diced green onion

– 2 tablespoons diced jalapeño

– 1 tablespoon mayonnaise

– 1 tablespoon yogurt (can substitute with mayonnaise)

– 1 teaspoon grainy dijon mustard

– 1 teaspoon hot sauce

– Salt and freshly ground pepper to taste

– 2 slices bread (thicker sliced preferred, such as sprouted or gluten-free)

– 2 slices sharp cheddar cheese (or preferred cheese like Havarti, Swiss, Muenster, or habanero cheddar)

– Extra jalapeño slices (optional)

Instructions

1-In a medium bowl, combine drained tuna, diced green onion, diced jalapeño, mayonnaise, yogurt, dijon mustard, hot sauce, salt, and pepper. Mix until well combined.

2-Toast the bread slices until golden.

3-Spread the tuna mixture evenly onto each slice of toasted bread.

4-Top each slice with a slice of cheese. Add extra jalapeño slices if desired.

5-Place assembled slices under a broiler for approximately 2 minutes, or until the cheese is melted and bubbly.

6-Serve immediately.
