– 1 medium yellow squash (8 ounces) with ends removed, quartered and sliced

– 2 1/2 cups fresh corn kernels adds sweetness and crunch

– 10 ounces grape tomatoes halved

– 2 tablespoons lemon juice

– 1/4 cup chopped fresh parsley

– 2 tablespoons chopped fresh basil

– 4 ounces crumbled feta cheese (approximately 1 cup) provides creamy, tangy contrast

Instructions

1-First: wash and dry all your fresh produce to keep it clean and crisp this includes the zucchinis, yellow squash, grape tomatoes, and herbs.

2-Next: heat 3 tablespoons of olive oil in a pan over medium heat and add the 2 cloves of minced garlic, cooking for about 1 minute until fragrant.

3-Then: add the sliced zucchinis and yellow squash, stirring for 3-4 minutes until they start to soften.

4-After that: toss in the 2 1/2 cups of fresh corn kernels and the halved grape tomatoes, cooking for another 2-3 minutes to blend the flavors.

5-Finally: remove from heat and stir in the 2 tablespoons of lemon juice, 1/4 cup of chopped fresh parsley, and 2 tablespoons of chopped fresh basil.

6-Top with the 4 ounces of crumbled feta cheese and serve right away for the best taste.

7-Wash and dry produce thoroughly.

8-Chop and prepare all veggies as specified.

9-Cook garlic and veggies in olive oil for even flavor.

10-Add herbs and lemon juice at the end for freshness.
