Ingredients
2 sticks butter (equivalent to 1 cup)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 cup granulated sugar
1.5 cups powdered sugar
1 egg plus 1 yolk
2 1/2 cups flour
1/4 cup freeze-dried strawberries blended into powder
1 drop red food coloring
1 teaspoon matcha powder
Flour for dusting
Instructions
1-First: in a mixing bowl, cream together the butter, baking powder, baking soda, salt, and granulated sugar until fully combined. This creates a smooth base that holds everything together nicely.
2-Next, add the egg and yolk, mixing until the mixture is homogeneous, which helps bind the ingredients.
3-Then, incorporate the flour and mix to form a dough keep it gentle to avoid overworking. Divide the dough into two equal halves, and mix the strawberry powder (and optional red food coloring) into one half, while adding the matcha powder to the other. Roll each half into rectangles that are about 1/4 inch thick and 8 by 11 inches in size for even layering.
4-Layer the pink strawberry dough rectangle on top of the green matcha dough rectangle, then roll the layered dough into a log along the longer side. Wrap the log in plastic wrap and chill in the refrigerator for 4 hours to overnight to make slicing easier.
5-Preheat the oven to 350 degrees Fahrenheit and line three baking sheets for even baking. Slice the chilled log into 1/4-inch-thick rounds and place them on the baking sheets. Bake for 10 minutes until theyβre just right crisp on the outside and soft inside. Let me tell you, the first time I tried this, I was amazed at how the swirls held their shape!
