1 bag frozen tater tots (3032 ounces)

16 ounces diced ham (substitute with cooked crumbled bacon or sausage, or omit for vegetarian)

1 1/2 cups shredded cheddar cheese

1 cup shredded mozzarella or monterey jack cheese

8 large eggs

1/2 cup milk

1 cup sour cream (full fat recommended)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

12 teaspoons hot sauce (optional)

Instructions

1-In a large bowl, whisk together the 8 large eggs, 1/2 cup milk, 1 cup sour cream, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1-2 teaspoons hot sauce if you’re adding some spice.

2-Pour this egg mixture evenly over the tater tot mixture in the baking dish, making sure everything is well coated for a uniform bake.

3-Bake for 45 minutes, or until the casserole is golden brown and set in the center.

4-Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top and bake for an additional 5 minutes until it’s melted and gooey.

5-Finally, let the casserole cool slightly before slicing and serving to keep it from falling apart.
