  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

– 2 boneless skinless chicken breasts

– 1/2 teaspoon garlic powder

– Pepper to taste

– 3 tablespoons cornstarch

– 3 tablespoons olive oil (divided)

– 1/2 medium onion

– 2 cups broccoli florets

– 1/2 red bell pepper

– 1/2 cup chicken broth

– 3 tablespoons mirin (or substitute with dry sherry or sweet marsala wine)

– 2 tablespoons soy sauce

– 1 teaspoon rice vinegar or apple cider vinegar

– 1/4 cup packed brown sugar

– 1 tablespoon cornstarch

– 1 teaspoon grated fresh ginger

– 2 cloves garlic, minced

Instructions

1-First Step: Prep and Sauce Start by preparing all ingredients, cutting the vegetables like broccoli into small pieces for even cooking. Whisk the sauce ingredients together in a bowl: 1/2 cup chicken broth, 3 tablespoons mirin, 2 tablespoons soy sauce, 1 teaspoon rice vinegar, 1/4 cup packed brown sugar, 1 tablespoon cornstarch, 1 teaspoon grated fresh ginger, and 2 minced garlic cloves. Cut the chicken into 1-inch pieces, season with 1/2 teaspoon garlic powder and pepper to taste, then coat with 3 tablespoons cornstarch.

2-Cooking the Chicken Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat. Cook half the chicken for about 4 minutes per side until browned and cooked through, then transfer to a plate. Repeat with the remaining chicken using the last tablespoon of oil. This ensures the chicken in your teriyaki chicken stir fry browns nicely without steaming.

3-Adding Veggies and Finishing If the pan is dry, add a splash of oil and sautรฉ the 1/2 medium onion for 1 minute. Add 2 cups broccoli florets and 1/2 red bell pepper, cooking for about 3 minutes until tender-crisp. Return the chicken to the pan, pour in the sauce, and stir constantly until it thickens in less than a minute. Remove from heat and serve right away with rice or noodles; the total time is about 35 minutes for prep and cooking.
