Instructions
1-To prepare the sauce, start by whisking the cornstarch with 1 cup cold water in a small saucepan. Then add the brown sugar, soy sauce or tamari, honey, ground ginger, and garlic powder. Simmer over medium heat, stirring frequently, until the sauce thickens and coats the back of a spoon, about 4 minutes.
2-Reserve 1/3 cup of the sauce for serving. Pat the chicken dry and season with the kosher salt, then toss it in the remaining sauce. Preheat the grill on high, place the chicken on the grill, reduce heat to medium-high, cover, and cook for 5 minutes to get char marks.
3-Flip the chicken, baste with leftover sauce, and continue cooking while turning and basting occasionally until the internal temperature reaches 165Β°F (74Β°C), about 7 to 8 minutes. Transfer the chicken to a platter, drizzle with the reserved sauce, and let it rest for 5 minutes before serving.
