Instructions

1-In a small bowl, whisk together 2 tablespoons olive oil, 3 tablespoons fresh lime juice, ยฝ garlic clove (minced), and ยผ teaspoon salt to make the dressing.

2-Arrange 5 cups cubed watermelon, heaping 1 cup diced English cucumber, and ยผ cup thinly sliced red onion on a large plate or platter.

3-Drizzle with half of the dressing to let the flavors start to blend.

4-Top with โ…“ cup feta cheese, 1 cubed avocado, โ…“ cup torn fresh mint or basil leaves, and ยฝ thinly sliced jalapeรฑo or serrano pepper if you want some heat.
