– 2 1/2 cups shredded cooked rotisserie chicken

– 1 tablespoon fresh lime juice

– 2 tablespoons fresh cilantro, plus more for serving

Instructions

1-First: gather and prep all ingredients including chopping onions, mincing garlic, and draining beans to streamline cooking.

2-In a large pot, heat a tablespoon of olive oil over medium-high heat, then add the diced onion and sautรฉ for 4 minutes as per the directions.

3-Next, add the minced garlic and sautรฉ for 30 seconds longer to build that savory base.

4-Once that’s done, pour in the chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper, salt, and pepper.

5-Bring everything to a boil, then reduce the heat to medium-low and let it simmer for 15 minutes to let the flavors blend.

6-For the next part, drain and rinse the beans, set the whole beans aside, and puree 1 cup of beans with 1/4 cup broth until nearly smooth to add creaminess.

7-After that, stir in the light cream cheese, corn, whole beans, and the pureed beans, mixing well, and simmer for another 5 to 10 minutes.

8-Finally, add the shredded rotisserie chicken, fresh lime juice, and cilantro, then serve hot with your favorite toppings.
